Let me tell you about this high-protein chicken dinner that has become a go-to in our house! It’s an all-in-one paleo-type meal that’s both hearty and full of flavor. Cauliflower Chicken With Olives is a real winner, especially with the bright flavors of lemon and thyme that really make the dish pop.
This one-pan meal keeps things simple without sacrificing flavor. Tender chicken, roasted cauliflower, and briny olives come together with lemon, thyme, and garlic for a dish that’s bright, savory, and satisfying. It’s easy to prep ahead, which makes it perfect for weeknights or low-effort weekend cooking.
Sweet, savory, and totally grain-free paleo-type recipe that our whole family loves. Honestly, it’s not just us—everyone who tries it becomes a fan! I like to pair it with a spinach salad to round out the meal, making it a filling, veggie-packed dinner.

My Thoughts About Cauliflower Chicken With Olives:
The beauty of this casserole is in the contrast—juicy chicken against crispy-edged cauliflower, the salty bite of olives balanced with lemon and herbs. It’s hearty enough to stand on its own, but you can pair it with a side of couscous, quinoa, or crusty bread to catch the flavorful juices.
If you’re prepping ahead, letting it marinate overnight deepens the flavors. And because it’s all roasted in one pan, cleanup is easy—no juggling pots or pans.
This is one of those meals that feels a little fancy but requires very little effort. Keep it in rotation for when you want dinner to be both healthy and full of flavor without a lot of hands-on time.
