  • 2 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup allulose or your preferred sugar substitute
  • 1 cup shredded carrots
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Optional:

  • 1/2 cup chopped walnuts or pecans (optional)
  • For the Frosting: 1/2 cup cream cheese (softened), 1/4 cup butter (softened), 1/4 cup allulose, 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the almond flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. In another bowl, whisk together the eggs, erythritol, shredded carrots, unsweetened applesauce, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped nuts if using.
  5. Pour the batter into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Note from Savannah: Gordon’s favorite cake is Carrot Cake, so when I started on Keto, I had to come up with some kind of Keto-friendly alternative. This is that recipe! We made these years ago, and absolutely loved them. At only 4 grams of carbs per serving, they are a snacker’s dream snack! We highly recommend them! I personally preferred the walnut garnish.
