I’m always on the hunt for quick and easy chicken recipes. This chicken breast recipe is bursting with lemon and cilantro flavor, and when you bake it instead of grilling, the flavors really soak into the meat. (Big thanks to Ana!)

Now, I can’t promise your kids will love this dish, but mine devour it every time. If you’re after a healthy dinner option, this chicken is definitely worth a try.

Baked Mustard Lime Chicken

Baked Mustard Lime Chicken

Cooking Time: 25 the minutes

Total: 1 Hour

Ingredients

  • 1 pound skinless boneless chicken breast
  • ½ cup fresh lime juice
  • ½ cup fresh cilantro, chopped
  • ¼ cup dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • ½ teaspoon celtic sea salt
  • ½ teaspoon ground black pepper

Instructions

  1. Start by combining the lemon juice, cilantro, mustard, olive oil, chili, salt, and pepper in a food processor.

    Give it a few pulses until everything’s well mixed.

    Next, wash the chicken breasts, pat them dry, and place them in a 7 x 11-inch baking pan.

    Pour the marinade over the chicken, cover the pan, and let it chill in the fridge for at least 15 minutes, or up to 6 hours if you have the time.

    When you’re ready to cook, bake the chicken uncovered at 350°F for 25-30 minutes, or until an instant-read thermometer hits 165°F.

    Once done, serve the chicken with the cooked sauce spooned on top. Enjoy!
